I finally tracked down the last bug preventing the PHP upgrade. We are now on the latest stable version. One less security nightmare to keep me awake at night.
I ended up having to remove the stats plugin, since it hasn't been updated by the developer since 2016. I'll be looking for a new stats plugin in the meantime.
